Baked Spanish Rice With Turkey Burger
Ingredients
1 tablespoon olive oil
2 pounds ground turkey
1 Cup of sharp Cheddar cheese
1/2 teaspoon salt
1/4 teaspoon coarsely ground black pepper
1 medium green peppers and one medium red pepper, cut into 1/2-inch pieces
2 cloves garlic, crushed with press
1 large onion, chopped
1 tablespoon paprika
2 cans (14 1/2-ounce) fire roasted diced tomatoes
1 can (14- to 14 1/2-ounce) chicken broth
2 1/2 cups long-grain white rice
1T of Chilli Powder
2 T of sugar
3 sprigs of cilantro
Preheat oven to 350 degrees Fahrenheit. Grease 1 1/2-quart casserole. In large skillet over medium heat, fry bacon crisp, drain on paper towels; crumble and set aside. Take 2 tablespoons bacon drippings. In hot drippings, cook onions and green pepper, red pepper, turkey meat, and spices until tender, stirring often, about 5 minutes.
Into measuring cup, drain tomatoes; add enough water to tomato liquid to make 1 3/4 cups liquid; cut up tomatoes. To onion mixture, add liquid, tomatoes, tomato sauce, sugar,salt, pepper,cilantro ,chilli powder; heat to boiling. Remove from heat and stir in rice; pour into casserole.
Cover casserole and bake 35 minutes or until rice is tender. Fluff rice with fork; sprinkle with cheese and bake 5 minutes. Garnish with cheese be careful the cheese does not melt too fast or burn. Makes 6 servings.
Serve with 1 Can of Re fried beans and a green tossed salad with South Western dressing.
I top the beans with cheddar cheese, green onions and cilantro, sometimes some hot peppers
I use canned beans but you can make your own if you like.
Southwestern Salad
ingredients
2 cups frozen or canned corn, well drained
1 can (15-1/2 oz. size) black beans, lightly rinsed, drained
2 tomatoes, chopped
4 green onions, sliced
1/3 cup chopped fresh cilantro
4 ounces Cotija cheese, crumbled
1/3 cup olive oil
1 1/2 teaspoon grated lime peel
3 tablespoons lime juice or rice vinegar
1/2 teaspoon cumin
1 teaspoon brown sugar
1/2 teaspoon salt
1 chipolata pepper, finely chopped
1/2 teaspoon adobe sauce from chipolata
5 cups torn romaine lettuce
1 medium avocado, peeled, pitted, cubed (optional)
1 cup coarsely broken tortilla chips, if desired
directions
In large bowl, combine corn, beans, tomato, green onion, cilantro and cheese. Toss to mix.
In small bowl, blend together olive oil, lime peel and juice, cumin, brown sugar,
salt and chipolata. Add romaine, avocado and
dressing to salad. Toss to mix. Garnish with broken tortilla chips before serving.
Tangy Southwestern Dressing
Ingredients
1/3 cup cider vinegar
1/3 cup ketchup
6 dashes Tabasco
1 tablespoon plus 1 teaspoon ground cumin
1 tablespoon plus 1 teaspoon freshly squeezed lemon juice
1 tablespoon plus 1 teaspoon granulated sugar
2 medium garlic cloves, finely chopped
1 teaspoon kosher salt, plus more as needed
1 teaspoon Worcestershire sauce
1/2 teaspoon freshly ground black pepper, plus more as needed
2/3 cup vegetable oil
cilantro to your taste
juice of one whole lime and lime zest to taste
Makes: 1 1/2 cups
Instructions
Place all of the measured ingredients except the oil in a large, nonreactive bowl and whisk to combine. Slowly drizzle in the oil,
whisking continuously, until all of it is incorporated. Season with additional salt and pepper as needed. Cover and refrigerate until

Middle Eastern Fire-Roasted Eggplant Dip
Ingredients
2 large eggplants
1 lemon, juiced
2/3 cup tahini ( sesame seed paste, available in the international aisle at the supermarket)
1/2 cup minced fresh parsley leaves
Kosher salt and freshly ground black pepper
Pita chips, for dipping
Directions
There are 2 ways to cook the eggplants.
I cook in my rice steamer in just a few min it is done. I don't like the stove top methods of cooking. The oven method is fine too.
Baking eggplant in a toaster oven requires little work, and using a toaster oven instead of an oven to cook eggplant can cut your utility costs. Cooking eggplant in a toaster oven instead of an oven can also help you avoid heating up your kitchen when the weather is warm. One cup of cooked eggplant supplies you with 4 percent of your daily value of vitamin C. The daily recommended value of dietary fiber in 1 cup of cooked eggplant is 8 percent.
Step 1
Break the raw egg open over a small bowl. Beat the egg with a fork until it is well blended. Set the bowl with the egg in it aside.
Step 2
Place the cup of seasoned breadcrumbs on a flat plate. Spread the breadcrumbs out on the plate evenly. Set the plate aside.
Step 3
Place the eggplant on your cutting board and slice it into 1/4-inch round pieces. Place the eggplant slices on a plate and set the plate aside.

Take the eggplant slices and blot each one dry with a paper towel to absorb any moisture.
Step 5
Grease the toaster oven tray with 1 tbsp. of olive oil. Pour the oil on the tray and spread it around, using a paper towel.
Step 6
Take one of the eggplant slices and dip it into the bowl of beaten egg. Use your fork to turn the eggplant slice over. Move the eggplant slice around in the egg to thoroughly coat the eggplant with the egg.
Step 7
Lift the eggplant slice from the egg with your fork, and let the excess egg drip off the eggplant and back into the bowl.
Step 8
Dip the egg coated eggplant slice into the breadcrumbs, turning the eggplant over so both sides of the eggplant are completely covered with breadcrumbs. Gently shake off any excess breadcrumbs.
Step 9
Put the eggplant slice on the greased tray.
Step 10
Repeat Steps 6 through 9 for the remaining eggplant slices.
Step 11
Drizzle the remaining tablespoon of olive oil on each eggplant slice. Distribute the oil between the slices evenly, and spread the oil on top of each eggplant slice with the round side of your spoon.
Step 12
Bake the eggplant in the toaster oven for 20 minutes, with the setting on 375 degrees Fahrenheit.
Step 13
Remove the tray of eggplant from the oven and top each eggplant slice with 1 tbsp. tomato sauce. Spread the sauce evenly with your spoon.
Step 14
Put the eggplant back in the toaster oven for another five minutes.
Warnings
Always leave a minimum of one inch between the food in your toaster oven and the top of the oven to prevent the possibility of a fire.
Tips
Sprinkle grated Parmesan cheese on the eggplant for additional flavor.
Top the sauce covered eggplant slices with grated mozzarella cheese five minutes before the eggplant is cooked, if desired.
Regardless of the cooking method you choose, once the eggplant is cool enough to touch with your hands, carefully peel the charred skin off the eggplant. Discard the skin. Move the flesh onto your chopping board, slice off the stem and discard. Using your knife, mince the flesh until almost smooth. Scoop into a bowl. When you have the flesh out then take a hand mixer and smooth it out like you were doing mashed potatoes.
I use the mixer to mix in the tahini it is stiff and hard to mix in so a little more oil to make it less stiff. I use olive oil or avocado oil, or sesame oil.
Add the lemon juice, tahini, parsley, and a little salt and pepper. Whisk together and taste for seasoning. Feel free to add more lemon juice, more salt and pepper... it will vary depending on the size of your eggplant, and how you like your dip to taste Serve with pita chips.
Finding ways to use Egg plant because it is good for your body
Eggplant season is from August to October, although it is generally available all year long. Eggplant grows from a vine similar to a tomato and is a member of the nightshade family of plants. Eggplant is low in calorie, with only 35 calories per cup, and high in fiber, vitamins, minerals and antioxidants.
Manganese
Manganese is a trace mineral. It is needed to help form connective tissue, bones, blood clotting factors and sex hormones, according to the University of Maryland Medical Center. It is also a component of the antioxidant superoxide dismutase. As an antioxidant, superoxide dismutase prevents free radicals from damaging cells and may protect you against aging and some chronic diseases. Adult men need 2.3 milligrams of manganese a day and adult women need 1.8 milligrams. A 1-cup serving of eggplant provides 0.13 milligrams.
Thiamine
Thiamine is a water-soluble B vitamin. As a water-soluble vitamin, it is not stored in the body and without adequate intakes you can become depleted quickly.

Chocolate truffles
Ingredients
For the Ganache:
21 ounces bittersweet chocolate
18 ounces (generous 2 cups) heavy cream
2 ounces (4 tablespoons) unsalted butter, cut into pieces, softened
2 ounces (1/4 cup) orange liqueur or raspberry vodka (optional)
For the Coating:
3 pounds bittersweet chocolate, chopped
2 cups Dutch-process cocoa powder, sifted
2 1/2 cups shredded coconut, toasted
2 cups nuts, toasted and finely chopped
Directions
Chop the chocolate: Use a chef's knife to chop the chocolate as finely as possible; this will help it melt quickly and evenly. Then place it in a medium glass bowl. (Glass retains heat, so the chocolate will stay melted longer.)
Make the ganache: Heat the cream in a small saucepan over medium heat until bubbles form around the edge. Remove from the heat and add about one-fourth of the chocolate; whisk until smooth. Slowly pour the cream mixture over the remaining chocolate in the bowl and let sit until the chocolate melts, about 30 seconds. Puree the melted chocolate with an immersion blender or beat with a whisk until all the lumps disappear and the ganache is smooth. Stir in the butter until smooth, then add liqueur, if desired. (Jacques adds the liqueur last, so the flavor doesn't cook off.)
Pour and set: Line a rimmed baking sheet with plastic wrap, leaving a 2-foot overhang on one side. Pour the ganache onto the baking sheet and spread evenly with a rubber spatula. Fold the plastic wrap back over and press directly onto the surface of the ganache. Let cool at room temperature at least 4 hours or overnight.
For the truffles: Using two teaspoons, scoop small mounds of the ganache onto parchment-lined baking sheets. Set aside until firm enough to roll, about 15 minutes in the refrigerator or 2 hours at room temperature.
Roll into balls: Place the chocolate mounds between both palms, squeeze slightly and roll. Refrigerate until ready to coat.
Temper the chocolate: This is a gentle melting and cooling process that gives chocolate a glossy finish. For the coating, place the chopped chocolate in a heatproof bowl set over a saucepan of barely simmering water and stir until melted, about 40 minutes. Pour into a clean glass bowl; stir to cool to between 88 degrees and 90 degrees, about 40 minutes. (Jacques recommends a laser thermometer for checking the temperature.)
Dip and coat: Spread out the cocoa powder, coconut and nuts on parchment paper. One at a time, dip each truffle in the tempered chocolate with a two-prong dipping fork (you can buy one at a baking-supply store or break off the middle tines of a plastic fork). Lift the truffle and let the excess chocolate drip off. Roll in toppings and place on a rack to dry. Store in an airtight container for up to 2 weeks.

My favorite food this time of the year when the air gets snappy and my toes freeze no matter how many socks I am wear, is soup. I don't know about you but I have to have something hot when it is cold outside so I pull out the crock pot and make a big batch of soup. Since I live alone and can get by with only cooking when I need to then this works for me.
Next a couple of thousand recipes I saved then I give up because I have not organized them and go online for a recipe. Well today I found this one and boy is it ever good.
Broccoli Cheese Soup
Original recipe makes 6 servings Change Servings
2 tablespoons butter
1 onion, chopped
1 stalk celery, chopped
3 cups chicken broth
8 cups broccoli florets

Directions
Melt 2 tablespoons butter in medium sized stock pot, and saute onion and celery until tender. Add broccoli and broth, cover and simmer for 10 minutes.
Pour the soup into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the soup right in the cooking pot.
In small saucepan, over medium-heat melt 3 tablespoons butter, stir in flour and add milk. Stir until thick and bubbly, and add to soup. Season with pepper and serve.
I made some homemade crotons and a big salad and I have several more meals and was it delicious.
